Before You Begin
- Ensure all Scouts understand the activity and any safety requirements.
- Discuss allergens and ensure participants are not lactose-intolerant or allergic to milk products.
- Gather all materials and prepare a safe, well-ventilated workspace for heating the milk.
What you'll need
- Milk (preferably with high fat content)
- White vinegar or apple cider vinegar
- Stove and saucepan
- Measuring cup
- Strainer with small holes
- Bowl
- Cold water
- Cheesecloth or undyed cotton
- Salt, pepper, chives, or other seasonings (optional)
The Activity
Step 1: Prepare Your Ingredients
- Record your initial observations of the milk and vinegar.
- Heat the milk in a saucepan over medium heat, stirring constantly to avoid burning.
Step 2: Separate the Curds and Whey
- When the milk begins to boil, reduce the heat to low and add vinegar gradually while stirring.
- Continue adding vinegar until the mixture separates into curds (solid) and whey (liquid).
Step 3: Strain and Rinse
- Pour the curds through a strainer and rinse with cold water to remove excess whey.
Step 4: Press and Season
- Press the curds to remove remaining liquid.
- Add salt, pepper, or herbs to flavour the cheese.
Step 5: Shape and Cool
- Wrap the curds in cheesecloth and let them sit for 1-2 hours before refrigerating.
- Once chilled, taste and evaluate your homemade cheese.
