Before You Begin

  • Ensure all Scouts understand the activity and any safety requirements.
  • Discuss allergens and ensure participants are not lactose-intolerant or allergic to milk products.
  • Gather all materials and prepare a safe, well-ventilated workspace for heating the milk.

What you'll need

  • Milk (preferably with high fat content)
  • White vinegar or apple cider vinegar
  • Stove and saucepan
  • Measuring cup
  • Strainer with small holes
  • Bowl
  • Cold water
  • Cheesecloth or undyed cotton
  • Salt, pepper, chives, or other seasonings (optional)

The Activity

Step 1: Prepare Your Ingredients

  • Record your initial observations of the milk and vinegar.
  • Heat the milk in a saucepan over medium heat, stirring constantly to avoid burning.

Step 2: Separate the Curds and Whey

  • When the milk begins to boil, reduce the heat to low and add vinegar gradually while stirring.
  • Continue adding vinegar until the mixture separates into curds (solid) and whey (liquid).

Step 3: Strain and Rinse

  • Pour the curds through a strainer and rinse with cold water to remove excess whey.

Step 4: Press and Season

  • Press the curds to remove remaining liquid.
  • Add salt, pepper, or herbs to flavour the cheese.

Step 5: Shape and Cool

  • Wrap the curds in cheesecloth and let them sit for 1-2 hours before refrigerating.
  • Once chilled, taste and evaluate your homemade cheese.
